S'mores ice cream
Chocolate or vanilla ice cream with a marshmallow swirl, graham cracker pieces and chocolate, built to taste like the campfire treat.
Sometimes found Found in some shops and some grocery freezers. What the badge means
S'mores ice cream is chocolate or vanilla ice cream with a marshmallow swirl, graham cracker pieces and chocolate, like the campfire treat. You can find it in some shops and some grocery freezers, but not everywhere.
This page covers how it tastes, how to make s'mores ice cream at home, what to serve with it, how common it is, and what the nutrition figures show.
What s'mores tastes like
S'mores starts with a chocolate or vanilla ice cream. The base is smooth and creamy, and the color follows the base you choose: pale cream for vanilla, brown for chocolate. Through it runs a marshmallow swirl, sweet and soft, with ribbons you can see in each scoop. Graham cracker pieces add a toasty, crumbly bite, and chocolate chunks add snap and a darker cocoa note. The goal is the same mix of flavors as the campfire treat: marshmallow, graham cracker and chocolate in one spoonful. Each scoop has more going on than a plain flavor, with three mix-ins set against a creamy base.
Where s'mores comes from
The sources we use do not record who first made s’mores ice cream or when.
What they do show is interest in its key flavor. In Talker Research’s 2025 survey of 5,000 adults, 24% named toasted marshmallow as a flavor they most wanted to try. That marshmallow note sits at the center of s’mores, alongside graham cracker and chocolate.
Factory practice also explains how the flavor holds together. The Guelph e-Book says pieces such as candy and cookies go into ice cream as it leaves the freezer, when about half its water is frozen. That is why the graham crackers stay in chunks instead of sinking, and why home cooks add them at the end of churning.
How to make s'mores at home
The simplest way in is a no-churn base made with condensed milk and whipped cream. The Base Builder sets up that style for you, sized in grams and cups. A Philadelphia base (no eggs) works too if you have a machine. Use a chocolate or vanilla base, whichever you like better under the marshmallow and graham.
Fold in broken graham crackers and chocolate pieces at the end of churning, then layer marshmallow creme in as you pack the container. The Guelph e-Book explains why the timing matters: in factories, pieces go in as the ice cream leaves the freezer, when about half its water is frozen and it is about as soft as soft serve. For a chocolate base, the same source says acceptable mixes can use 3% cocoa powder, 2.5% cocoa powder plus 1.5% chocolate liquor, or 5% chocolate liquor.
The Base Builder gives a base formula built on standard food-science ranges, not a tested recipe. If you already have a recipe you like, the Recipe Scaler resizes it to your machine and converts cups to grams.

What to serve with s'mores
Lean into the campfire theme. Hot fudge over a scoop brings out the chocolate chunks and adds warmth against the cold. Toasted marshmallows on top give a smoky, gooey contrast to the cool marshmallow swirl inside. Whole or broken graham crackers work as a topping, a scoop-on-top cookie, or a crunchy base for a sundae. Keep the extras close to the three flavors already in the bowl and it stays tasting like the real thing.

Nutrition, roughly
FoodData Central has no record for s'mores itself, so the figures here are for a plain vanilla base, not this flavor. Regular vanilla has 207 kcal per 100 grams, with 11 g fat, 21.2 g sugars and 3.5 g protein; a 1/2 cup (66 g) portion is about 137 kcal. Rich vanilla has 249 kcal per 100 grams. The marshmallow, graham crackers, chocolate and sweeteners change these numbers.

Questions people ask
Can I make s'mores ice cream without an ice cream machine?
Yes. A no-churn base made with condensed milk and whipped cream works well. Fold in graham crackers and chocolate pieces, then layer marshmallow creme as you pack. The Base Builder sets up the no-churn style for you.
When should I add the graham crackers and chocolate?
Add them at the end of churning. At that point the ice cream is about as soft as soft serve, which is when factories add pieces too, according to the Guelph e-Book. Layer the marshmallow creme in as you pack.
Should s'mores ice cream have a chocolate or vanilla base?
Either works. S'mores ice cream is made with a chocolate or vanilla base, and both carry the marshmallow swirl, graham cracker pieces and chocolate chunks. Pick the one you like better with marshmallow.
How popular is s'mores ice cream in the U.S.?
It is a middle-of-the-pack pick. In IDFA's April 2026 survey of 2,205 U.S. adults, it ranked 32nd of 40, with 3% choosing it as one of up to five favorites. In 2024 it ranked 23rd of 40.
