Classic A classic you can buy almost anywhere. What the badge means
Rocky road ice cream is chocolate ice cream with marshmallows and nuts, usually almonds or walnuts. It is a classic you can buy almost anywhere.
This page covers what it tastes like, how to make rocky road ice cream at home, what to serve with it, how common it is in U.S. surveys, and what the nutrition figures show.
What rocky road tastes like
Rocky road starts with chocolate ice cream. Into that go marshmallows and nuts, usually almonds or walnuts. The result is lumpy on purpose. One spoonful gives you smooth chocolate, chewy marshmallow and crunchy nut all at once.
The color is chocolate brown, broken up by pale bits of marshmallow and pieces of nut. The taste is mostly chocolate, with sweet, soft marshmallow and a toasty note from the nuts. It sits in the chocolate and candy section of our flavor library, and it is a good pick when you want more texture than plain chocolate gives you.
Where rocky road comes from
The story goes that rocky road was first made in the late 1920s, but who made it first is disputed. National Day Calendar describes it as chocolate ice cream with nuts and marshmallows and reports competing claims, including William Dreyer in the late 1920s and George Farren.
Where it is eaten is clearer. YouGov’s 2018 poll found people in the West more than twice as likely as people elsewhere to name rocky road as their favorite, at 11% against 3% to 5% in other regions. Instacart’s June 2022 to May 2023 data showed California, Montana and Nevada buying more of it than the national average, and in Instacart’s 2025 data it was the West’s standout flavor.
How to make rocky road at home
Rocky road uses a Philadelphia base, which has no eggs. The Base Builder sets up that style for you, sized to your machine, in grams and cups. It gives a base formula built on standard food-science ranges, not a tested recipe. Make it a chocolate base. The Guelph e-Book says workable chocolate mixes can use 3% cocoa powder, 2.5% cocoa powder plus 1.5% chocolate liquor, or 5% chocolate liquor, and that cocoa is best added to the mix early.
Fold in mini marshmallows and chopped, toasted nuts during the last minute of churning, or stir them in as you pack the container. Factories add pieces like nuts and candy as the ice cream leaves the freezer, when about half its water is frozen and it is about as soft as soft serve, the Guelph e-Book says. That is why home cooks add them at the end.

What to serve with rocky road
Rocky road already has a lot going on, so simple partners work well. Hot fudge doubles down on the chocolate and melts into the gaps between marshmallows and nuts. A spoonful of whipped cream adds a cool, light contrast to the chewy, crunchy pieces. Sliced banana turns a bowl into something close to a sundae or a banana split. Put all three together when you are serving a group and want one dessert that feels complete.
