Ice cream recipe converter: cups to grams

Scale an ice cream recipe by a factor, a batch volume or your machine, and see every line in grams and cups.

This ice cream recipe converter answers two questions: how many grams each ingredient weighs, and how much of everything you need for a batch that fits your machine. It is for home makers who have a recipe in cups.

The numbers under this introduction are a worked example with the default inputs, an example list rather than a tested recipe. They update as soon as you change the recipe lines or the way you scale.

Sugar and milk powder dissolve, so the mixed base comes out a little smaller than the summed volume. That leaves some headroom in the machine.

How the scaler works

Recipe volume = sum of every line in fl oz (weights turned to volume by cup weight)
Factor = your factor, or target fl oz ÷ recipe volume
Grams = cups × the ingredient's FoodData Central cup weight

You type the recipe one line at a time: an amount, a unit and an ingredient. To scale an ice cream recipe, the tool first finds a factor. If you scale by a factor, you pick it yourself, anywhere from 0.1 to 20. If you scale to a target volume or a machine preset, the tool adds up every line by volume and divides the target by that sum. The preset volumes come from each maker’s own manual.

Take the worked example: 2 cups heavy cream, 1 cup whole milk, ¾ cup granulated sugar and 4 large egg yolks. By volume that adds up to about 32.2 fl oz. The KitchenAid 2 qt bowl takes a 46 fl oz batch, so the factor is 46 divided by 32.2, which comes to 1.43. The tool multiplies each line by that factor. You get 2 ⅞ cups of cream, 1 ⅜ cups of milk, 1 ⅛ cups of sugar and 5.7 large yolks.

Next comes cups to grams. Each listed ingredient has a cup weight from USDA FoodData Central: 238 g per cup for heavy cream, 244 g for whole milk, 200 g for granulated sugar and 17 g per large yolk. So the scaled cream weighs 679 g, the milk 348 g, the sugar 214 g and the yolks 97 g. Cups round to the nearest 1/8, tablespoons to 1/2 and teaspoons to 1/4. Grams show to the gram, or to 0.1 g under 10 g.

One thing to expect: sugar and milk powder dissolve, so the real mix is a little smaller than the summed volume. Your scaled batch will leave a little headroom in the machine.

Dextrose's cup weight comes from its label serving (8 g per 2 ½ tsp). The strawberry figures stand in for fruit purée; other fruits weigh a little differently.

Numbers the scaler uses

  • Cups to grams uses each ingredient's cup weight from USDA FoodData Central, checked October 27, 2026, such as 238 g per cup of heavy cream.
  • Dextrose weighs 153.6 g per cup, based on its label serving of 8 g per 2 1/2 teaspoons.
  • Machine presets use the batch size from each maker's own manual, for example 46 fl oz for the KitchenAid 2 qt ice cream bowl.
  • Volume units follow standard US measures: 1 cup equals 8 fl oz or 16 tablespoons, 1 tablespoon equals 3 teaspoons, and 1 fl oz equals 29.57 mL.
  • Weight units convert at 28.35 g per ounce and 453.6 g per pound, and a large egg yolk counts as 17 g.
  • Cups round to the nearest 1/8 cup (1/4 cup from 4 cups up), tablespoons to 1/2 and teaspoons to 1/4.

Questions people ask

How do I convert an ice cream recipe from cups to grams?

Type each line with its amount, unit and ingredient from the list, and the tool shows it in grams next to the original unit and US cups or spoons. It uses each ingredient's cup weight from USDA FoodData Central, so a cup of granulated sugar becomes 200 g and a cup of whole milk becomes 244 g.

How do I double an ice cream recipe?

Choose scaling by a factor and enter 2. Every line doubles, and the tool shows the new amounts in the original unit, in grams and in US cups or spoons. The factor can run from 0.1 to 20, so 0.5 halves a recipe. Check that the doubled batch still fits your machine before you churn.

How much ice cream base fits a KitchenAid 2 quart bowl?

We use 46 fl oz, the batch size from KitchenAid's own manual for its 2 qt ice cream bowl. Pick that machine preset and the tool works out the factor by dividing 46 fl oz by your recipe's volume, then scales every line by it.

Why can't my other ingredient be converted from cups to grams?

The tool has no cup weight for an ingredient you type in as other, so it cannot turn cups into grams for it. It can still convert that line volume to volume, such as cups to milliliters, and weight to weight, such as ounces to grams.

Why does my scaled batch leave room in the machine?

The tool adds up your lines by volume to find the recipe's size. Sugar and milk powder dissolve into the liquid, so the real mix comes out a little smaller than that sum. A batch scaled to a machine preset therefore leaves a little headroom in the bowl.

Are the numbers I type sent to your server?

No. The calculators run in your browser, and the numbers you type are not sent to our server. Your inputs are kept in the page address, so you can share a result by copying the link and sending it to someone.
