Rooted in a place

Each flavor here is tied to a region or a food tradition, and some have official standing. India's food regulator, FSSAI, sets a composition for kulfi as a variety of ice cream (standard 2.1.14). Turkey's patent office registered Maraş dondurması, the stretchy ice cream of Kahramanmaraş, as geographical indication No. 344 in 2018. Textures vary too, from dense kulfi to chewy, stretchy dondurma.
