Strawberry ice cream

A pink, fruit-forward classic made with fresh strawberries or puree, sweet with a little tartness and soft bits of berry.

Classic A classic you can buy almost anywhere. What the badge means

Strawberry ice cream is a pink classic built on fresh strawberries or strawberry puree. You can buy it almost anywhere in the United States.

This page covers how it tastes, where it comes from, how to make strawberry ice cream at home from a base formula, what to serve with it, how common it is in surveys and what FoodData Central lists for its nutrition.

What strawberry tastes like

Strawberry ice cream runs from pale blush to deep rose pink. It tastes of ripe berries: sweet first, with a little tartness behind it. Many versions carry soft bits of fruit through the scoop, so each spoonful can be smooth cream one moment and a tender piece of berry the next.

It is made from a sweet cream base flavored with fresh strawberries, strawberry puree or both. The puree gives the color and an even berry taste through the whole pint. The pieces add texture and little bursts of fruit. How deep the pink looks depends on the berries and how much fruit goes in, so homemade batches often look paler or deeper than store-bought tubs.

Where strawberry comes from

Strawberry has a long documented history in the United States. IDFA’s history of ice cream says Dolley Madison served a strawberry ice cream at President James Madison’s second inaugural banquet at the White House in 1813.

Today the fruit share follows clear rules. The Guelph e-Book says fruit usually goes in at about 15 to 25% by weight, and that many fruit preparations sold to makers, such as solid pack strawberries, already include red color. Under federal rules (21 CFR 135.110), when strawberries are used with artificial strawberry flavor, the artificial flavor is treated as the main one if the fruit is less than 6% of the finished weight.

Instacart’s data from June 2022 to May 2023 showed one regional quirk: Washington, D.C. was the only place that bought more strawberry ice cream than the national average.

How to make strawberry at home

The usual base style for strawberry is Philadelphia, which has no eggs. That lets the fruit taste come through clearly. A no-churn base made with condensed milk and whipped cream also works. The Base Builder sets up the Philadelphia style for you and sizes it to your machine. It gives a base formula built on standard food-science ranges, not a tested recipe.

To add the flavor, chop the strawberries and cook or macerate them with some of the sugar. Puree part of the fruit into the cold base. Keep some pieces back to fold in later.

Fold in the reserved berry pieces, or a cooked strawberry sauce, in the last minute of churning. Factories add pieces such as fruit as the ice cream leaves the freezer, when it is about as soft as soft serve, which is why home cooks add them at the end. If you already have a strawberry recipe, the Recipe Scaler resizes it to your machine and converts cups to grams.

What to serve with strawberry

Strawberry goes well with chocolate, either as a sauce or as a second scoop beside it. Serve it over shortcake or a slice of pound cake for an easy dessert. A drizzle of balsamic syrup sharpens the berry taste and adds a dark, tangy note. Lemon is another good match: try it next to a lemon dessert or with a little lemon zest on top.
